SYDNEY: Dean & Nancy on 22 is inviting guests to embark on an “extra celestial” journey with their bold new cocktail menu launching 15 November.
Inspired by the limitless horizons of the universe, Above the Clouds, features 17 deliciously creative cocktails – including Dean & Nancy’s first edible cocktail – named after cosmic experiences designed to transport guests beyond Level 22 with just one sip.
Journey to the moon with the Rocketman ($29), an edible cocktail shaped as an astronaut and served as an ice-cream. Haku Vodka is combined with MAPO lemon and fior di latte ice cream, violet liqueur, ginger, and vanilla before being layered into a white chocolate mould and presented in a cloud of smoke.
Alien on Holiday ($28) takes its cues from human fantasy and the notion of an Alien falling in love with Sydney after observing it from outer space. With notes of lime, kiwi, and pistachio, plus warmth from Hendrick’s Gin and Fino sherry, this drink is extremely approachable, fruity, and refreshing for the coming Sydney summer.
When it comes to space food, astronauts dine on tasteless rehydratable food and drinks, but back on Earth Dean & Nancy’s Space Taco ($29) is a literal flavour bomb, topped with a mini deep-fried tortilla shell. Patron Tequila has been infused with Old El Paso taco spice mix and combined with Mexican Nixta Liqueur (corn liquor), verjuice, burnt lime agave and Inferno Bitter to create a profile that mimics a delicious taco, albeit space style.
Served with an illuminated LED cube, Ray of Light ($28) takes inspiration from the light that passes through the dark ages of the universe before stars and galaxies form. This beautifully balanced whiskey high ball uses Michter’s Sour Mash Whiskey infused with condensed milk and combined with lulo fruit and lemon myrtle, to create a silky, sour, and fruity finish. Meanwhile, White Clouds ($26), is Dean & Nancy’s twist on the Amaretto Sour but with velvety, coconut cream on top, to give a dream-like feeling of being ‘above the clouds’. Made of Amaretto Disaronno, Campari, coconut, orange and Peychaud’s Bitter, this elegant cocktail is the perfect after-dinner drink.
Above the Clouds is the second major menu change since Dean & Nancy on 22 launched and pays homage to the sky bar’s spectacular location. Even the menu is a replica of the A by Adina building where the bar is located and opens to reveal the 17 playful cocktails.
“Living and working in a microgravity environment requires culinary ingenuity and creativity,” says Restaurant and Bar Manager, Stefano Filardi. “Back on earth, we’ve applied a similar technique to create a cocktail menu that reflects the energy of the city as seen from Level 22 and above.”
Above the Clouds launches on Wednesday, 15 November and was developed in collaboration with the creative minds behind some of the world’s best bars* - Dean & Nancy on 22 and Maybe Sammy.
